Autumn is our favourite time of year to Cater. All the hard work put into growing the produce in our Gardens and other Local Farmers is rewarded with abundant harvests.

This is the 3rd year that we have had the pleasure of Nourishing Teresa Campbell’s Women’s Sacred Medicine Retreat in Tofino. Her approach to facilitating is rooted in earth medicine and it is such an honour to provide deep nourishment for her Tribe.

The menus was all about slow roasted root veggies, wild crafted mushrooms and kale.

Thursday

Dinner ~ Roasted Squash Soup, Moroccan Tangine, Quinoa, Greens w/ Green Goddess Dressing

Friday

Lunch ~ Thai Coconut Corn Chowder, Forbidden Black Rice & Yam Salad, Sunny Seed & Almond Paté with Chipotle Hemp RAWgles, Greens w/ Creamy Tahini Dressing

Dinner ~ Emerald City Soup, Yam & Millet Patties w/Nasturtium Sorrel Pesto, Bodacious Beet Salad w/ Goat Feta, Kale Slaw

Dessert ~ Apple Berry Chocolate Ginger Crisp w/ Maple Whip Cream

Breakfast ~ Apple Cinnamon RAWgles w/Tahini & Apple Slices, Warm Chia Pudding and Tree Island Yogurt

Lunch ~ Frittata Primavera, Roasted Potatoes, Chipotle Ketchup, Greens w/Cran-Orange Dressing

Dinner ~ Coconut Cashew Curry, Eggplant Bharta, Pappadums w/Apple Ginger Chutney, Raita, Brown Basmati and Local Greens w/ Maple Balsamic
