Mung Bean Kitchari

Mung Bean, Lentil & Ghee Kitchari

This nourishing dish is both detoxifying and a balanced protein that is easily digestible. In India it is served to the young, old, sick and healthy. It can be used as a ‘mono cleanse’ to give the digestive system a rest.

Serves 4-6.

Ingredients:

  • 1/2 cup mung beans
  • 1/2 cup basmati rice
  • 3 Tbsp ghee
  • 1 Tbsp whole coriander seed
  • 1 Tbsp whole cumin seed
  • 2 tsp turmeric
  • 2 tsp Himalayan crystal salt
  • 1-2 Tbsp grated ginger
  • 2 cups chopped veggies of your choice ~ explore your Dosha and choose accordingly
  • 3-4 cups water
  • Cilantro to garnish

Mindful Preparation:

  1. Rinse rice and beans well and set aside. In a medium to large pot, heat ghee over medium heat. Once ghee has melted, add coriander, cumin and turmeric.
  2. Saute until fragrant then add rice and beans and combine well.
  3. Add water, salt and ginger, cover and bring to boil. Simmer for 15 minutes or so. Then check to make sure there is enough water. This mixture should look like porridge.
  4. Add veggies in order of cooking time ~ for example, if you are using winter squash, cauliflower, broccoli and kale (our favorites) Start by adding the squash and cauliflower, simmer 5-10 minutes. Turn off and add the broccoli and kale.
  5. Garnish with cilantro ~ breath deep, give thanks and ENJOY!!
