FALL IS HERE…..

On the west coast, it felt like summer would never end. We were still swimming in the Lake until last week then BOOM ~ the rains came and once again we are lighting fires and making soups! The leaves are doing their transformational dance and the gardens are being put ‘to bed’ for the winter.

THE MAGIC OF PUMPKINS

With Halloween right around the corner, this is the time for all things pumpkin! Not only are these orange fruit (yes they are fruit!) festive, but that also have a whack of health benefits. Pumpkins are high in Vitamin A, antioxidants and other minerals.

PUMPKIN SEEDS are rich in magnesium and phosphorus, and a great source of iron and zinc.

Here are a few ways to best utilise your pumpkin this season!

1. Roast the seeds! Once you have hollowed out your pumpkin you can seperate the seeds from the guts, rise and dry the seeds, toss in olive oil and spice and roast for 12-15 minutes at 350 degrees.
2. Use the meat to make pumpkin puree. Once you’ve taken out the seeds add the meat to a blender with a splash of water and 1 tsp of PUMPKIN SPICE. Use in your next Fall baking creation.
3. Feed it to the wildlife. If you live in the country, you can cut up your old pumpkins and leave it out for deer, birds and squirrels helping them to fatten up for winter!
