These simple Living Vegetarian Tacos (and Vegan!), or RAWcos as we have coined them are always a huge hit at Milagro Retreats ~ Quick, super tasty and hearty enough to serve as a main course.
Sprouted Walnuts are a wonderful source of magnesium, alpha linoleic acid, vitamin A and E. Magnesium helps you keep your cool, and vitamin E is great for your hair, skin and nails. Vitamin A helps your eyes and a vast amount of organs function properly.
Walnuts are Brain Food and when they are sprouted and dehydrated they make a wonderful Snack on the Go!
Curious about Sprouting Nuts? The short story is soaking nuts & seeds takes out the bad guys so that we can fully absorb goodness. The long story is naturally occurring chemicals (phytic acid) that inhibit humans from absorbing the nutrients are pulled away from the nut and/or seed while it soaks, leaving the food much more bio-available.
*Yields 12-15 RAWcos
2 cups sprouted walnuts (no need to soak! We have done this for you at hOMe Grown with love!)
1 tsp ground cumin
2 tsp ground coriander
1 tsp ancho chili powder
2 Tbsp Wheat Free Tamari
Juice of 1 lime
2 Tbsp cilantro ~ minced
4 large purple cabbage leaves ~ sliced in 1/4 or romaine leaves
1 avocado ~ sliced
1 tomato ~ sliced
Place all the filling ingredients in the bowl of a food processor and blend/pulse until it is thoroughly combined. Marinate for 1 hour
Place a scoop of filling on 1/4 cabbage leaf, top with a slice of avocado and tomato. Enjoy with a drizzle of cashew cream!
